Recommended cooking methods:

Drum smoker
Kamado grill
Traditional wood-fired pit
Maintain a cooking temperature between 225°F and 275°F for the best balance of bark development, smoke flavor, and rendered fat.
Best Prepared
Trim excess hard fat while leaving approximately ¼ inch of the fat cap.
Season generously with coarse salt and black pepper or your favorite brisket rub.
Smoke at 225–275°F.
Cook until the bark is fully developed.
Wrap when desired (or continue unwrapped if preferred).
Continue cooking until probe tender, generally between 200–205°F.
Rest for at least 2–4 hours before slicing.
Patience during the rest is just as important as patience during the cook.
Storage & Thawing
Keep frozen until ready to prepare.
Thaw in the refrigerator for 3–5 days depending on size.
Remove packaging before trimming.
Cook promptly after thawing.
Leftovers freeze exceptionally well.
Pro Tips
Trim conservatively—don’t remove all the fat.
Use a reliable instant-read thermometer, but cook until probe tender rather than chasing an exact temperature.
Rest the brisket in a cooler or warming oven for several hours before slicing.
Slice the flat and point separately, following the grain of each muscle.
Save the rendered tallow for roasting vegetables, searing steaks, or making potatoes.

Frequently Asked Questions About USDA Prime Brisket
What is a whole packer brisket?
A whole packer brisket includes both the flat and the point muscles, making it the preferred cut for traditional Texas-style barbecue.
Why choose USDA Prime brisket?
USDA Prime briskets contain more marbling than lower grades, helping the meat remain juicy and tender throughout a long smoke while delivering exceptional flavor.
What temperature should I smoke a brisket?
Most pitmasters cook brisket between 225°F and 275°F, depending on their preferred cooking style and timeline.
When is brisket done?
Rather than relying solely on temperature, brisket is finished when it becomes probe tender. This typically occurs between 200°F and 205°F, but tenderness is the true indicator of doneness.
How long should brisket rest?
A whole brisket should rest for at least 2 hours, with many pitmasters preferring a 4- to 6-hour rest to maximize tenderness and moisture.

The Brisket
The brisket primal comes from the lower chest of the cow, just beneath the chuck. Because these muscles support much of the animal’s weight, brisket is a hardworking cut known for its rich beef flavor and firm texture.
Brisket is most famous as the centerpiece of Texas barbecue. When cooked low and slow, the connective tissue gradually breaks down, transforming the meat into tender, juicy slices packed with deep, smoky flavor.
Whether prepared in a traditional smoker, slow roasted in the oven, or braised for classic comfort dishes, brisket rewards patience with incredible flavor and a satisfying texture that barbecue lovers know and appreciate.
This was the first time I’ve ever made a brisket. I was very nervous on the whole overnight cook process but it turned out great! Called 44 farms to ask about how the brisket was being delivered and the gentleman I spoke to was very informative on the defrosting process. Would definitely order another one!
The brisket was amazing. The quality of beef is definitely much better than you can buy at any grocery store. Came in dry ice, meat was still frozen and in great condition.
I've been smoking brisket for 15 years, this brisket was the best I have ever produced. Great flavor, tender, and so juicy. I will be ordering again soon.
Brisket was nicely trimmed with minimal final trimming and shaping needed. The point was heavily marbled and great for burnt ends. Still have another one to smoke later this month.
This brisket was amazing as always! The quality of 44 Farms meat far superior to most of what is available today. I am very happy with your product and will be a lifelong customer.
the best tasting brisket i've found...great taste...great marbling...ran it on my smoker overnite @ 225...wrapped and rested in cooler for 4 hrs...it was like butter...already have a large one for next family gathering
This is my first time doing business with 44 Farms and let me tell you what I was impressed with how easy it was to order. Two days later my package arrived in a beautiful designed box. I open up the inside to find my brisket solid as a rock!
The packaging was top notch. The brisket was beautifully trimmed as well. The flavor was amazing as well. We will be ordering more from 44 Farms and I have already recommended them to many people here back home. Thank you for making this a pleasurable experience!
Excellent customer service and proactive communication. Briskets arrived on the date requested in perfect condition. By far the best briskets we have ever had - nicely trimmed, excellent marbling, juicy and delicious. A week later everyone is still talking about them. I highly recommend 44 Ranch, and will be a repeat customer.
Excellent, extremely tender brisket. Was on smaller side as far as the briskets I’m used to cooking go but it was nice that it only required minimal trimming.
We had a party and smoked it and it was unreal very rich flavor. Our first time doing a prime brisket and it's worth every extra penny! Great packaging and I will be ordering more !!!
