Frequently Asked Questions About USDA Choice Tri-Tip Steak
What cut of beef is tri-tip?
Tri-tip comes from the bottom sirloin primal near the rear of the animal. It is known for its triangular shape and rich beef flavor.
Is tri-tip a good cut of meat?
Yes. Tri-tip is prized for its bold flavor, tenderness, and versatility. It’s one of the best cuts for grilling and smoking.
What temperature should tri-tip be cooked to?
Tri-tip is best cooked to medium-rare, around 130–135°F internal temperature.
Is tri-tip better grilled or smoked?
Both methods work well. Grilling produces a steakhouse-style crust, while smoking adds deeper barbecue flavor.
Why is tri-tip popular in California?
Tri-tip became famous through Santa Maria-style barbecue, a California grilling tradition focused on cooking tri-tip over red oak wood with simple seasoning.

The Sirloin
The sirloin primal sits just behind the short loin and before the round, bridging the gap between tender steak cuts and leaner working muscles. This area produces flavorful, versatile cuts that balance tenderness with a hearty beef taste.
From the sirloin come popular cuts like top sirloin steaks and sirloin roasts. These cuts are known for their robust flavor and firm texture, making them excellent choices for grilling, roasting, or slicing for steak dishes.
While slightly leaner than ribeye or strip steaks, sirloin cuts deliver outstanding beef flavor and perform well with simple seasoning and high-heat cooking. For many steak lovers, sirloin offers the perfect combination of quality, flavor, and versatility.
Once again 44 Farms comes through with some fantastic Tri-tips. Smoked with Post Oak at 200 degrees until they reached 115 degrees. Rested for 15 minutes, then seared in a cast iron pan with butter, garlic and thyme. Turned out fantastic!
I received some very nice quality tri-tip roasts that I cut into steaks and thoroughly enjoyed pan-fried in some olive oil. I will be a repeat customer, and will be glad to keep my purchases in Texas.
Let me start by saying all my past orders were great!
I was disappointed with the tri tips in this order. The smaller one weighed 1 pound 8 ounces frozen and packed and the larger one weighed 2 pounds 13.5 ounces frozen and packed. The two single pictures are the small one and the other picture shows both side by side.
While the meat had great flavor I’m extremely disappointed in the size. You advertise an average of three pounds so my small one was half the average size.
So much more flavorful than any tri tip from Publix, Winn Dixie, etc. The Tri tip, chuck roast. Brisket and ground chuck are my favorites, repeated orders.
Another great cut of meat from 44 farms
I cooked my first Tri-tip today from 44 farms. All I can say is like cutting through butter than it melted in my mouth.
So delicious
I put this on my smoker for about 2 hours. The flavor and tenderness were out of this world. Finished it in a carbon steel pan with some butter as a reverse sear. Glad I bought a 4-pack, I still have 3 more to look forward to!
The Best Tri-Tip!
My family and I can see and taste the quality difference in these tri-tips! I will definitely repurchase them. The price is on point for the quality.
Also, I had a shipping issue, which delayed my delivery by 4 days. Needless to say, the meat was ruined. 44 Farms immediately responded to my email, even though it wasn’t their fault. They sent me new meats right away, which were delivered as scheduled. That is amazing customer service!
I smoked my Tri Tip on my Masterbuilt 1150. We had several neighbors who are seasoned smokers amd they were blown away! If you start with 44 Farms Angus Strong Beef the smoke is the icing on the cake!!
My husband grew up in California where this cut was easy to locate. I grew up in Texas and it was rare to find this cut. It is great smoked which is how we usually prepare it. Delicious!
I love your tri tips, I cook them just like a brisket, slow tell reach internal temp of 203. I don't cut any of the fat off, at the temp it just melts in your mouth. Great meats!
Good and tender. I always buy 2 tri tips. All three times I’ve purchased, one tri tip is always bigger than the other. Doesn’t matter because they are equally great tasting and perfectly marbled.
Trim from the package was good. Smoked on a pellet grill for 2 hrs and finished off on the grill. Very flavorful. My new favorite easy Q. Going to order more today!
The steaks were great. I had so me questions and made multiple phone calls and no one ever answered or responded.
Very disappointing. You’re a better company than that. If I’m paying top dollar I think I’m owed a little bit of backup, but got nine.
