Cut Details
Our USDA Choice Bone-In Short Ribs are cut from the plate section, known for producing the thick, meaty ribs often referred to as “dino ribs” in Texas barbecue.
Unlike thinner grocery store short ribs, these plate ribs feature rich marbling, deep beef flavor, and substantial meat on top of the bone—making them one of the most sought-after cuts for low-and-slow cooking.
What Makes Plate Short Ribs Special?
Cut from the plate primal for maximum beef flavor
Thick, meaty bones ideal for smoking or braising
Rich marbling that renders during long cooks
Known in barbecue as “dino ribs” due to their size and presentation
Best Cooking Methods
Bone-in short ribs are best cooked low and slow to allow the connective tissue and marbling to fully break down.
Perfect for:
Smoking
Braising
Slow roasting
Outdoor barbecue
When cooked properly, the result is tender, juicy beef with deep, beef-forward flavor and a rich bark on the exterior.
Why 44 Farms Short Ribs?
44 Farms Black Angus cattle are selected for consistent marbling, tenderness, and flavor. Combined with our no added hormones or antibiotics standards, these short ribs deliver true Texas barbecue quality from ranch to table.
Best Prepared
Smoke our beef ribs low and slow, aiming for an internal temperature above 200°F. Set your pit between 225°F and 275°F, depending on your preferred cooking speed. You’ll know they’re done when the meat pulls back from the bone edges, and a thermometer slides in effortlessly. Once off the heat, let the ribs rest for at least an hour to allow the juices to redistribute for the perfect bite.

The Plate
The plate primal is located on the lower belly of the cow, directly beneath the rib section. This area produces
richly flavored cuts that are known for their bold beef taste and distinctive texture.
One of the most popular cuts from the plate is the skirt steak. Long and thin with pronounced grain, skirt steak
is prized for its intense flavor and performs best when cooked quickly over high heat and sliced against the
grain.
Plate cuts are commonly used in dishes that celebrate big beef flavor, including fajitas, stir-fries, and grilled
steak recipes. When prepared properly, these cuts deliver exceptional taste and a satisfying, hearty bite.
Incredible meat! Everything came quick and frozen just as it should be. The quality of the beef ribs were exactly why I decided to purchase from 44 Farms. I ordered 4 plates of beef ribs and a few little things. They were delivered all the way up to northwestern Washington state in 2 days and the packaging was flawless. Beef ribs are one of the most enjoyable things to smoke and ribs from 44 farms only increases that factor.
No wrap tricks. No shortcuts. Just time, smoke, and patience. Heavy bark, deep smoke, butter-soft meat — and honestly, these stacked up against some of the best beef ribs I’ve had in Texas.
Dino Ribs at their Best!
The 44 Farms plate ribs were outstanding! Plate ribs are a simple cook that usually turn out well. The 44 Farms ribs definitely were a notch above the rest. We cooked them unwrapped, and took them off our Traeger at 208F. Rested the ribs about an 1-1/2 hour. The result was “Melt in your Mouth” goodness. I highly recommend 44 Farms. No regrets. We will be back! Thanks for a wonderful product.
I wanted to try my hand at smoking “Dino Ribs” and was having trouble finding them locally, so I chose these online via internet search. Arrived as scheduled, still frozen, in a styrofoam cooler with dry ice. While the styrofoam added protection and enough insulation to keep the meat cold, it’s not a good ecological choice and likely contributes to the exorbitant shipping cost.
Now on to the good stuff: They were DELICIOUS! I did have to trim down the fat cap a bit but no other trimming was necessary. The meat was melt in your mouth tender and the flavor sublime! 44 Farms provides top quality product and service. I had a question about how long I they would keep thawed before cooking and they responded to my email 2 hours after I sent it. If you are looking for premium meat delivered to your door, these guys are for you.
One of the easiest but most rewarding cooks in my smoking experience. The meat came out perfect from the great marbling. Will definitely order these again 🙂
This was by far one of the most tender beef ribs we have ever had. It was a big hit by everyone. It would definitely be on our weekly dinner rotation if it was within our budget. We will most certainly be ordering again in the near future.
Amazing quality and spectacular results. Made these into pastrami beef ribs and they turned out incredible. It was my first experience with 44 farms and I will definitely be back again.
These ribs were Amazing! Not only did they taste absolutely delicious the butcher did a great job trimming them there was a nice fat cap to protect the meat and it rendered perfectly to create a great bark. 10/10
I made these for my elderly parents and they both absolutely loved them! My Mom thought they were Prime grade or higher because of how marbled and juicy they were. My Dad finished his huge serving and asked me to order more so we could do that again. Huge hit at our house!
Ribs were all a good size except for one little one they put in the box. A little disappointing considering the order was $300. Still the Dino ribs were delicious for my family to enjoy. Made the trip to HEB to replace the smaller rib rack.
There beef ribs are hands down the best i've ever had!! Always satisfied with their quality!! Can't say enough about their customer service. Top notch!!
These whole short ribs never disappoint they are more than meaty definitely a belly pleaser and the presentation when finished is always amazing I smoke mine at 200 degrees for 6 hours and the meat falls off the bone it’s so tender we are definitely returning customers your guests will be impressed
Dry rubbed overnight. Spent about 3 hours on the smoker at 235ish. Wrapped in butcher paper finished in over for about 45 minutes at 250, The meat pulled clean off the bone!!! Very good!
I recently purchased from 44 Farms 2 prime briskets and 2 dino ribs.
When you order from 44 Farms, you know you will get top quality meat not found in stores.
Some say it's expensive, but being honest, you get what you pay for.
I will continue to order from 44 Farms, though I've slowed my BBQs due to the Texas heat. But in about 2 more months, Im ordering from 44 Farms again and again. Give them a try, you won't regret it.
Plus, I love the gift they gave me, which was a 44 Farms cooler bag. Thank you 44 Farms.
The plate ribs were a hit with my family. EVERYONE loved them, tender, juicy and very flavorful. This was my first cook on my new pellet smoker. 44 Farms did not disappoint and I will be back shopping soon. Thanks a bunch.
