Butcher's Cuts
Ask a butcher what they take home and it's rarely the ribeye. It's the hanger, the bavette, the Denver — cuts there are only one or two of on the whole animal, which is why they never ended up on the front of a menu. They carry the most beef flavor of anything in the case.
They also ask something of you. Most of these want a screaming-hot grill or cast iron, a few minutes a side, and a rest before you slice them thin against the grain. Get that right and you'll stop reaching for the ribeye too.
Black Angus beef, hand-cut with care in Texas. No added hormones or antibiotics. Ever.
