The Round

The round primal comes from the rear leg of the cow. Because these muscles are used frequently, the cuts from this section are naturally lean, firm in texture, and rich in beef flavor.

The round is commonly used for products like roast beef, deli-style sliced beef, and beef jerky. Its low fat content and tight muscle structure make it especially well suited for jerky, where the meat can be thinly sliced and dried while maintaining great flavor.

While round cuts are leaner than steaks from the rib or loin, they deliver excellent beef taste when prepared properly. Slow roasting, marinating, or slicing thin against the grain helps ensure tender, flavorful results.
